Bacon, Egg, and Potato Casserole

Casserole!!  Really? Casserole?!  I never thought a casserole could be so good. It's usually not my first choice of a meal since I am a pretty picky eater.  They always seem to have crunchies where I don't want them and mysterious items that I can't get past.  I know, I'm nuts but that's me.  For some crazy reason, tonight the tastebuds were saying casserole.  I persued it and I found this amazing one from cooks.com and like most casseroles you can tweek them any way you want.  Which of course I did since it didn't have cheese and I love cheese. BACON, EGG, POTATO CASSEROLE

6 large potatoes
6 boiled eggs
 300gm diced bacon or about 5 rashers bacon
 3 tbsp butter or marg
 7 tbsp flour (any sort)
 breadcrumbs, for sprinkling (optional)
 2 cups milk
Basically all you do is: Peel the potatoes and boil until just done; cool and slice. Boil eggs, cool and slice. Fry the diced bacon or bacon pieces. In a casserole dish, layer the sliced potatoes, sliced boiled eggs, and then the bacon. When finished, prepare a white sauce and pour over dish, then sprinkle some breadcrumbs on the top, if desired. I made a cheese sauce instead of a normal white sauce, added shredded cheddar cheese to the top to give it a yummy crunchy cheese texture, and used pre-made hashbrowns for a quicker meal.  I really hope you enjoyed it, my family sure did!
